No-Bake Baking....

I decided to do some baking on Sunday but I actually went with items that didn't involve baking (more just melting)...

So if you want to make something really easy this week for a Christmas party or what not, here you go....

Chocolate Chow Mein Cookies...
1 bag of Butterscotch chips
1 bag of Chocolate chips
1 can (mine was 5 oz) of Chow Mein Noodles

-Melt the chips in a double boiler or the microwave and then stir in the Chow Mein Noodles.
-Scoop spoonfuls on to wax paper and let it harden

**I recommend breaking up the chow mein noodles a little before mixing them in or you will break you face trying to eat them.**

You can also do this with just butterscotch chips or with peanut butter chips or whatever.  I have also seen them with peanuts added in.
Next I wanted to make something vegan to send to my Mother-In-Law for Christmas.  So I asked Leah from Lovely Life of Leah for some help.  She gave me this recipe from the Alicia Silverstone book, The Kind Diet.  So I headed out to Earth Fare (sort of like Whole Foods) and bought..............

Crispy Peanut Butter Treats
Brown Rice Syrup (1 3/4 cup)
Brown Rice Cereal (aka healthier Rice Krispies) (1 box)
Carob Chips (1/2 cup)
Natural Peanut Butter (3/4 cup)

You basically just heat the syrup over the stove until in liquefies and then melt in the peanut butter.  Then you pour that on the cereal and mix it together in a bowl.  Add in the carob chips once it cools and then spread it in a pan.  The wax paper helped on that.

Veganlicious-OK so these weren't that bad.  I like the peanut butter flavor.  I was not a huge fan of the carob chips so I just didn't put that many in.


So that was my Sunday afternoon.

I so should have tried the chocolate chow mein things when I was over at your place. The cake tasting pretty much gave me my fill of sweets for the day though.

yayayaya! I'm so excited that your peanut butter rice krispy bars came out good, they look awesome! Yeah... carob's kind of like sushi... you either love it or hate it. I was raised vegan so I totally love the flavor, but it is a little 'earthy' if you haven't been having it sprinkled on your popcorn your whole life lol!

I love the no-bake haystacks! so much fun!!!!

Love No-bake Recipes..here is one of my favs.

Puppy Chow

1/2 cup peanut butter
1/4 cup butter
1 cup chocolate chips
1/2 teaspoon vanilla
9 cups Crispix cereal (any flavor)
1-1/2 cups powdered sugar

1. Combine peanut butter, butter and chocolate chips in a microwave safe bowl.

2. Microwave for one minute then stir to blend all ingredients thoroughly. Add 1/2 tsp. vanilla. Stir well.

3. Place the 9 cups of Crispix cereal in a very large bowl.

4. Pour the peanut butter-chocolate mixture over the cereal and toss evenly, making sure all the cereal gets a good covering.

5. Coat with powdered sugar, sprinkling evenly over the cereal and tossing as you sprinkle to cover each piece well.

I do one very similar to the first but add in some PB and then pour over marshmallows instead. You should be able to taste it before the end of the week! (Recommend putting in the freezer for a bit first, but good either way)

How great! I'm going to have to try to make these tomorrow! I just made fudge and it was a success so maybe the good luck will continue with these!
